Brewing Broadleaf Zao Chun Yin Ya Tea in Covered Bowls

Pre-brewing Preparations:
Tea ware: Electric instant kettles, covered bowl, fairness cup, teapot, tea holder, tea spoon, tea folder, gourd-shaped strainer, wastewater container, etc.
Water: Boil water in the electric instant kettle. Cool the water down to 85°C, ready for use.
Tea leaves: Spoon broadleaf Zao Chun Yin Ya Tea into the tea holder.
Note:
1.     Yunnan broadleaf green tea is characterized by fat and sturdy buds and leaves with white fuzz, rich in elements, enduring brew. It is best to brew in a kettle (or covered bowl) and drunk from tea cups.
2.     Yunnan broadleaf Zao Chun Yin Ya Tea used here is a variety of sun-dried green tea.
3.     Moisturize the sun-dried green tea before formal brewing. The second and third brewing are the best brews.
4.     The brewing duration should not be too long in the first brewing, but should be steeped more in later brews.
5.     Sun-dried Yunnan broadleaf green tea is generally brewed using the “bottom brewing’ method.
6.     The temperature of water for brewing low quality broadleaf green tea should be higher than the high-quality ones.

Brewing:
1.     Tea ware: Keep the tea ware ready for brewing.
2.     Warm teapot: Pour a little hot water into the covered bowl.
3.     Warm fair mug: Pour the water used to warming the bowl into the fairness cup.
4.     Warm tea cup: Pour the water in the fairness cup into every tea cup.
5.     Drain water: Hold the teacups with tea tong and drain the water.
6.     Add leaves: Carefully spoon dried broadleaf Zao Chun Yin Ya Tea leaves into the covered bowl.
7.     Moisturize tea leaves: Pour hot water into bowl to moisturize the tea.
8.     Add water: From a height, fill the bowl with hot water.
9.     Formal brewing: Cover the bowl for 15-20 seconds.
10.  Pour tea liquid: Pour the brewed liquid into the fairness cup.
11.  Distribute the liquid: Distribute the liquid into each tea cup to 70% full.
12.  Appreciation: The tea is ready for drinking after brewing for 1 minute.
